Carrot Cake Muffin Treats

1-1/2 Cup whole wheat flour
2 Tablespoon vegetable oil
1 Teaspoon baking soda
1/4 Cup raisins
1 Tablespoon baking powder
1/4 Cup chopped walnuts
1 Teaspoon ground cinnamon
1/3 Cup low fat milk
1/4 Teaspoon ground nutmeg
8 Ounce can unsweetened crushed pineapple
1/4 Teaspoon ground ginger
1-1/2 Cup grated carrots
1 Egg

Combine the dry ingredients in a bowl
Add the remaining ingredients and stir to blend
Spoon into oiled muffin tins or paper muffin cups
Bake at 350 F for 20 to 25 minutes

1 muffin - 127 calories, 1 bread, 1 fat exchange 19 grams carbohydrate,
4 grams protein, 5 grams fat 149 mg sodium, 201 mg potassium, 23 mg cholesterol
